Prep Steps
- Zest a lemon to measure the indicated amount.
- Snap or cut the bottom end off each asparagus spear. Discard the ends. Slice the asparagus into 1 inch pieces.
Cook Steps
- Fill a large pot 2/3 high with water and cover. Place over high heat. Proceed with next step as water comes to a boil.
- Once water is boiling, add 1 tablespoon of salt and stir in the orzo. Cook until tender but with a slight bite, about 9-10 minutes, or according to the package instructions. Add the asparagus to the pot after 5 minutes.
- Once you’ve strained the orzo, place it back over medium-low heat and cook to remove the extra moisture. Then, stir in the mascarpone cheese and lemon zest and season with salt and pepper to taste. Once well combined and cheese is melted, remove from heat.
- Transfer the lemon and mascarpone orzo with asparagus to a serving bowl or dinner plates. Serve warm!

- Preheat the oven to 400 degrees.
- Prepare a sheet pan with a layer of parchment paper.
- In a small bowl, combine the mayonnaise, panko and Parmesan cheese.
- Lay the chicken cutlets out on the prepared sheet pan. Season both sides with salt and pepper, then divide the mayo mixture evenly among the cutlets. Smooth it over the tops in an even layer.
- Place the chicken in the preheated oven and bake until golden brown on top, about 12-15 minutes. Rotate the pan after 7 minutes to ensure even cooking.
- Prepare a large plate or tray with layers of paper towels. Once chicken is removed from oven, transfer to the paper towels and let rest for a few minutes.
- Transfer the Parmesan panko chicken cutlets to dinner plates or a serving platter. Ready to eat!
Steps for Sautéed Broccolini with Crushed Red Pepper

- Trim the bottom ends off the broccolini.
Cook Steps
- Heat a medium saute pan over medium heat. Add olive oil and crushed red pepper. Heat for approximately 2 minutes to infuse the oil.
- Add the broccolini and season with salt and pepper. Toss to coat. Cook until tender but with a slight bite, approximately 5-7 minutes.
- Transfer the broccolini to dinner plates or a serving platter and serve!
