Steps for Stir-Fried Pork with Brocolli and Carrots
Prep Steps
- Peel carrots and cut into 1/8 inch thick slices to measure the indicated amount.
- Trim the broccoli florets off the stem into bite-size pieces to measure the indicated amount.
- Cut the ends off the green onions and peel away any loose or damaged outer layers. Rinse under cold water and dry thoroughly. Thinly slice the green onions to measure the indicated amount.
- Cut one end off a piece of ginger. Stand the piece upright on the flat edge. Use a knife to slice down the sides of the ginger, removing the skin. Mince the ginger to measure the indicated amount.
- Smash the garlic under the side of your chef’s knife to remove the peel. Mince the garlic.
- In a small bowl, whisk together the soy sauce and cornstarch until cornstarch is dissolved. Then whisk in the sesame oil, hoisin and crushed red pepper.
Cook Steps
- Dry the pork cutlets thoroughly, then slice across the grain into 1/4 inch thick strips. Season with salt and pepper.
- Heat a large saute pan over medium-high heat. Add vegetable oil and warm.
- Once oil is hot, add the pork strips. Oil should sizzle when you add the pork. Cook until pork is nicely browned, flipping as it cooks to ensure it browns evenly, about 4-6 minutes. Transfer to a clean plate and reserve the pan.
- Place the pork pan back over medium heat. If the pork did not leave enough oil in the pan to cover the bottom, add some vegetable oil and warm.
- Once oil is hot, add the carrots and broccoli, ginger, garlic and green onion. Saute until vegetables start to caramelize slightly, about 3-5 minutes. Stir often.
- Once the vegetables have started to caramelize, add the water. Cover and cook until vegetables are tender, about 3-5 minutes.
- After most of the water has cooked out and vegetables are tender, pour in the soy sauce mixture and add the pork back to the pan. Cook until sauce is thickened and vegetables are well combined. Remove from heat.
- Transfer the stir-fried pork with broccoli and carrots to a serving bowl or dinner plates. Serve warm!
Steps for Ginger Rice with Peas
Prep Steps
- Cut one end off a piece of ginger. Stand the piece upright on the flat edge. Use a knife to slice down the sides of the ginger, removing the skin. Mince the ginger to measure the indicated amount.
Cook Steps
- Measure out the jasmine rice into the basket of a fine mesh strainer. Rinse until the water runs clear, then place in a medium saucepan with the indicated amount of water. Set over high heat. Proceed with next step as water comes to a boil.
- Pour the frozen peas into a small microwave-safe bowl. Microwave with 2 tablespoons of water until defrosted, approximately 3 minutes.
- Once water is boiling, cover pot, lower heat and simmer until all the water is absorbed and grains are tender. It should take about 15-20 minutes, but check the cooking time on your particular brand of rice and adjust timer if necessary.
- Stir the defrosted green peas and minced ginger into the cooked rice. Season with salt and pepper to taste.
- Transfer the rice to a serving bowl or dinner plates. Ready to eat!
