Stir-fry, by definition, is a quick-cooking preparation, so this meal is perfect for a weeknight meal. Plus, it sneaks in a bunch of vegetables, which are also key to a balanced meal.
Notes:
- Rice cookers are amazing kitchen gadgets. If you have one, cook the rice early and let it keep warm until it’s time to serve dinner.
- Look for pork cutlets or pork chops that are cut thinly so they cook quickly.
Use frozen carrots and broccoli for a weeknight time saver, if desired.

Prep Steps
- [ Ginger Rice with Peas ] Use a peeler to peel the ginger. Then, mince ginger to measure the indicated amount.

Cook Steps
- [ Ginger Rice with Peas ] Measure out the jasmine rice into the basket of a fine mesh strainer. Rinse until the water runs clear, then place in a medium saucepan with the indicated amount of water. Set over high heat. Proceed with next step as water comes to a boil.
- [ Stir-Fried Pork with Broccoli and Carrots ] Dry the pork cutlets thoroughly, then slice across the grain into 1/4 inch thick strips. Season with salt and pepper.
- [ Stir-Fried Pork with Broccoli and Carrots ] Heat a large saute pan over medium-high heat. Add vegetable oil and warm.
