Fresh apple fritters make a delicious breakfast. You can even make them the night before and warm before serving.Notes:
- My favorite apple to cook with is the Pink Lady, but use whatever you like. Granny Smith or Golden Delicious are two of the most popular.
If the dough gets too soft between batches, pop it in the refrigerator.

Prep Steps
- Core apple (peel also if you wish) and cut into 1/4 inch pieces. Place apple on paper towels and dry pieces as much as you can. Allow apple pieces to sit on paper towels while you finish preparing fritters.
Cook Steps
- Add enough oil to come up the sides of a deep frying pan about 2/3 of the way. Heat on medium-high heat to 350 degrees. Use thermometer to verify the temperature and adjust as necessary. When you add the batter the oil will cool, so you must increase the temperature but you do not want it to get too hot and burn.
- In a large bowl combine the flour, sugar, baking powder, cinnamon, nutmeg and salt.
- Add the apple pieces and toss to coat in the flour.
- In a medium bowl melt the butter in the microwave, then add the apple juice and whisk in the egg.
- Check your oil temperature to make sure it is close to 350 degrees, then add the wet ingredients to the dry and stir just until combined.
- Use a 1/3 measuring cup and a spoon to make even fritters of the same size. Add a heaping scoop of the batter to the hot oil, and use the spoon to push down the very center of the fritter and spread it out. This keeps the fritter from being too fat in the middle and cooking unevenly, and also adds all those delicious fried nooks and crannies.
- Adjust the stove as necessary to maintain a temperature between 325 and 350 degrees. Fry on each side for 2-4 minutes. Cook in batches as necessary. Use kitchen tongs to flip fritters and transfer to baking rack to drain and cool.
- Combine powdered sugar, apple juice and vanilla in large mixing bowl.
- When fritters are cool enough to handle, use tongs to dip each one completely in the glaze. Place each fritter back on the baking rack to dry.
- Let glaze set until dry, then serve fritters fresh and warm.
