Slightly cheesy but still very light, this recipe packs in lean ground chicken, healthy veggies and just enough creamy texture so the kids will ask for more.

- Ground Chicken Breast
1 Pound - Cheddar Cheese, Shredded
1 Cup - Cream Cheese
4 Ounces - Sour Cream
3 Tablespoons - Fusilli Pasta
2 Cups - Vegetable Mix, Frozen
1 Cup - Black Pepper
- Dried Basil
2 Teaspoons - Garlic Powder
1/4 Teaspoon - Kosher Salt
- Onion Powder
1/2 Teaspoon - Extra Virgin Olive Oil

Prep Steps
Cook Steps
- Fill a large pot 2/3 high with water and cover. Place over high heat. Proceed with next step as water comes to a boil.
- Heat a large saute pan over medium heat. Add olive oil and warm.
- Once oil is warm, add ground chicken, onion powder, garlic powder and dried basil. Crush the basil between your fingertips as you add it to the pan. Season with salt and pepper. Cook until chicken is browned and cooked through, about 9-12 minutes, stirring often. Use a spoon or spatula to break apart the chicken as it cooks. Once browned, remove from heat.
- Once water is boiling, add 1 tablespoon of salt and stir in the pasta. Cook until tender but with a slight bite, about 7-8 minutes, or according to the package instructions. After about 5 minutes, or for the last 2 minutes of cooking, stir in the frozen vegetables.
- Place cream cheese and cheddar cheese in a medium microwave-safe bowl. Microwave for 1-2 minutes until melted, stopping to stir midway.
- Place strained pasta and veggies back in the large pot. Add the browned chicken and sour cream, and pour in the melted cheeses. Season with salt and pepper to taste, and stir until all ingredients are well combined.
- Transfer the cheesy chicken pasta to a serving dish or dinner plates. Serve warm!
